Dessert sauce recipes with dulce de leche (milk caramel)

 

Caramel sauce, with a hint of chocolate or perhaps coffee? Well, look no further. This set of recipes cover a range of dessert sauces to enjoy with delicious baked goods or to die for desserts. Quick and easy, it makes a handy collection of seductive recipes using milk caramel or dulce de leche.  

 

1) Basic Milk Caramel Sauce (Dulce de Leche Sauce)

  • 3-4 tablespoons La Feliz dulce de leche
  • 185 ml (3/4 cup) cream (whipping)
Stir all the ingredients in a saucepan over low heat until well mixed. Simmer, uncovered, for about 5 minutes, or until thickened slightly. Serve warm with cakes, puddings, waffles, pancakes or ice cream.
 

2) Rich Dark Chocolate and Milk Caramel Sauce

  • 80 g (2+3/4 oz) good quality dark chocolate, chopped
  • 125 ml (1/2 cup) cream (whipping)
  • 2 tablespoons La Feliz dulce de leche
Put the chocolate and cream in a heatproof bowl and set over a saucepan of simmering water. Stir until chocolate has melted and the mixture is well combined, then add the dulce de leche. Serve warm with cakes, puddings, waffles, pancakes or ice cream.
 

3) Coffee and Dulce de Leche Sauce

  • 2 tablespoon La Feliz dulce de leche
  • 1/2 teaspoon cornflour (cornstarch)
  • 170 ml (2/3 cup) milk
  • 2 tablespoons instant coffee powder
  • 60 ml (1/4 cup) cream (whipping), lightly whipped
Heat the milk, dulce de leche and coffee in a saucepan until almost boiling. Gradually whisk into the cornflour diluted in a bit of water and stir over low heat until thick. Allow to cool. Stir in the cream. Serve warm with cakes, puddings, waffles, pancakes or ice cream.
 

4) Chocolate Fudge Sauce

  • 150 g (1 cup) chopped dark chocolate
  • 30 g (1 oz) unsalted butter
  • 2 tablespoons La Feliz dulce de leche
  • 150 ml (5 fl oz) cream (whipping)
Combine the dark chocolate, butter, dulce de leche and cream in a saucepan on low heat. Stir until the chocolate has melted and the mixture is smooth and continue stirring until the mixture reaches boiling point, then remove from the heat. Serve warm with cakes, puddings, waffles, pancakes or ice cream.
 

5) Caramel Peanut Sauce

  • 4 tablespoons of La Feliz dulce de leche
  • 3 tablespoons crushed peanuts
  • 60 ml (1/4 cup) milk
  • 185 ml (3/4 cup) cream (whipping)
  • 100 g milk chocolate, chopped
Put dulce de leche and peanuts in a saucepan with the milk and cream. Stir over very low heat until combined. Add the chocolate and stir until melted. Cool to room temperature. Serve with vanilla ice cream. 
  

06) White Chocolate and Milk Caramel Sauce

  • 125 g good quality white chocolate, chopped
  • 80 ml (1/3 cup) cream (whipping)
  • 2 tablespoons of La Feliz dulce de leche
Put the white chocolate, cream and dulce de leche in a small heatproof bowl and set over a small saucepan of simmering water. Stir until melted and smooth. Serve warm with cakes, puddings, waffles, pancakes or ice cream.
 

07) Coffee and Dulce de Leche Cream Sauce

  • 60 g (1/4 cup) La Feliz dulce de leche
  • 250 ml (1 cup) cream (whipping)
  • 30 g instant coffee powder
  • 2 tablespoons of coffee liqueur, such as Tia Maria (optional)

Combine dulce de leche, cream and coffee in a small saucepan. Stir over medium heat, without boiling, until well mixed.  Bring to the boil, reduce the heat, and simmer, uncovered, for about 3 minutes, or until the mixture has thickened slightly. Stir in the coffee liqueur, if using. Serve warm with cakes, puddings, waffles, pancakes or ice cream.
